   Incredibly unique rustic environment. The service was exceptional. The wine selection was incredible and they let us taste a few of the selections before making a decision. Portions are on the smaller side, but we were still able to have meat, a fish, vegetable and appetizers and walk away satisfied. Definitely a must visit in Cabo.

   We vacation in San Jose del Cabo annually, and we have been coming to Carbon Cabron for several years now. This place is 100% about the food. There is no other place in and around Los Cabos where one finds a more thoughtful, careful, and creative preparation. We generally eat a la carte, only because the tasting menu is simply too much food for us, but each a la carte menu item has some interesting and tasty accompaniments, and you simply cannot make a wrong move. I have never tasted broccoli, beets, or onions prepared in this way, and the flavors are myriad and blend together magically. We also had the short rib, served on the bone, which is amazingly tender, juicy, and flavorful. The shrimp dish is equally lovely, served on a bed of pork belly with a lively aioli. The wine list is relatively short but there isn't a dud on the list, and the mark-up, unlike several of the more well-known glitzy places toward San Lucas, is actually reasonable. The service is impeccable, and what is lost in a relatively non-descript shoppinig-center location is more than compensated by a rich rustic interior that has a private, spacious, non-crowded feel to it. Pay attention to these folks--they received regional recognition from Michelin in 2024 and might soon be in contention for a star.

   I had an amazing dinner with exceptional service. I am not easy to pleased, nor am I easily impressed, so I feel as though my review matters. Take it as you may, but this place is a unique hidden gem. I was reintroduced to some old favorites and introduced to some new things I didn't even know existed. BRAVO!

   We’ve been several times when traveling to the area. Always a go to. Also, learned they were recently nominated for a Michelin. Staff and servers were great! Rodrigo was helpful on the wine. Gracias!

   Nos gusta mucho regresar , la calidad de los alimentos siempre es muy buena Esta vez el ribeye me toco ligeramente seco Todo lo demas ,estuvo genial como siempre La bebida de martini tipo dirty fue buena , no la mejor pero estuvo bien El postre muy bueno Nuevamente valio la pena

   Everything wood fired was great. Had the Short-rib, broccoli, smoked old fashion , corn and the agua chiles. Soooo good.

    OMG, what an incredible dining experience. The service was outstanding, the food was absolutely incredible. This is our second time there, and I highly recommend it. We did the tasting menu and there were 4 of us. Each course was memorable. Our server Vinny was awesome!
