Carbone is Chef Mario Carbone’s homage to the great Italian American restaurants of mid-20th century in New York, where delicious, exceptionally well-prepared food was served in settings that were simultaneously elegant, comfortable and unpretentious. His food captures the essence of that history but takes its culinary cues from the kitchens of his childhood, the great talents with whom he worked throughout his early career and incorporates his signature techniques that blend familiar and bold flavors to create the most craveable dishes. We call this Carbone Italian.

    We requested an intimate table when we booked but instead we were seated a table in the middle. We asked to be moved to a booth which was a little more intimate and initially we were told we could not be moved although there were 2 empty booths beside us. After waiting we noticed no one was seated in the booths so I requested to speak to a manager to ask the reason we were not able to move . He came over and stated he wasn’t sure why we were denied the booth initially but moved us. We were appreciative of that but it just didn’t sit well with me that we were denied when that’s what we requested when making the reservation. The ambiance was great however the food was definitely not what we were expecting. There were limited choices on the menu, and for the price paid it just wasn’t worth it and I didn’t appreciate the service.

    Hype was more than the experience. Located in a warehouse space with drapes and plants separating areas, it was a noisy and cold setting. Our waiter (Captain) was great. He explained that food is served family style and is to be shared and quickly brought out a bread bowl (most was drenched in butter/oil), cheese and salami. He then told us their dining style of having multiple courses. Don’t be pushed into ordering every single course as I felt we were. We had 3 types of prosciutto with cheese (two were terrible), then the spicy rigatoni vodka. The pasta was the best tasting food we had. We followed with the steak Diane. The meat was tough and full of fat leaving much inedible. I had a glass of Rosè and my daughter ordered a daiquiri that tasted like wet grass (even the waiter agreed). He replaced it with an espresso martini that was delicious. They recognized my daughter’s birthday with two credit card sized pieces of amaretto cake baked in the colors of Italy. We won’t return because it’s extremely overpriced for the lackluster food, no ambiance and location. There are MANY beautiful places to enjoy fine dining with delicious food in Dallas and this isn’t one. We should’ve gone back to Bobs or Al Biernat’s.

    Now I watched Business News and the owner of this so-called Italian restaurant was touting his success and the typical line "I learned from my Grandma" line that seems to be selling with the ill-informed in the epicurean skills. If you like Italian food and respect Italian cuisine, then stay away 1000 miles from this so-called Italian eatery. Seems like their chiefs were given a one-day Master class subscription and at the end of the class all got an apron and cooks' uniform. our 45 minutes of the most disappointing "experience" they say was nothing but a disaster and I would warn anyone and all to choose a local pizzeria over this pocket burner. Their menu was so huge that you could print the Magna Carta on both pages. Veal Parmesan should not be $98. The best Veal Palmisan I had was at Carmines which served 4 and we paid $40. The bottom line this place is a huge disappointment as we saw a few tables leave without paying their checks and we stuck it out because of the nice waitress Kai as it was not her fault. I wont be surprised that this place is OOB but again its Dallas, people have money but no taste.

    Our server, Deon, went above and beyond to make our experience at Carbone one to remember. Amazing service and his attention to detail was top-notch! Can’t wait to come back soon!

    Saw our waitress in the beginning. After we ordered, barely saw her. Veal parm $91 was JUST breaded veal and dry. Not even served on any type of pasta!!! It was a little dry,needed more sauce since it came by itself!! Not worth $91. Ambience was nice!

    The food was very good, the waiter was very good and the ambience was perfect. I definitely think the price is for the experience because the food portion size was very disappointing for how much it cost. The waiter also was not very honest about the portion size, I feel like to manipulate getting a bigger tip.
