I'm sorry that I can't give this place a better review. Granted, we were there on Christmas night and maybe you were not fully staffed, but our experience was not what we had hoped for.

Well…we go every Christmas to Vino and this year we noticed a steep drop off in quality, value, management and the simple things… I don’t think we will be back…. $360 for two people in which we ordered 3 drinks and 3 other courses. The drinks are just one huge ice ball with virtually no liquid, the ribeye was a half inch cut of tastelessness and we had to ask to get Parmesan cheese on our pasta and cherries in our drinks. Things are not just given anymore you have to specially request them. I would hate to use that logic in my business in surgery. I would say, “sorry sir or madam I didn’t know you wanted me to save your life as you stopped breathing, you never requested it.”

Place was great. Beautiful. Food was outstanding. Service was mid. We wanted to order a second drink and asked a different server for a drink menus and our server never came by again for about hour and 15 min to check on us so we didn’t get to order one. We also ordered a goat cheese brochette as an app and they forgot it. And when we asked about it all they responded with was they were making the bread fresh and do you still want it. At that point we had eaten our entrees. And it didn’t make sense at that point to eat and appetizer. We had about 5 people helping out table which in theory sounds nice but it actually made it less enjoyable as no one knew when we had been checked on and had over a hour and 15 min that no one came by. One person greeted us with water, one said she was our server (seemed the best), then our server handed us off to another gentleman (who never came by again except when we told him our food was missing), one person dropped of the food, other person filled up waters, our original server handed us the bill. Very strange process. Other than the confusing service the place seemed great.

Very disappointing experience last night for my wife and I. Our server seemed friendly, but nobody is less impressed with servers trying to memorize orders than I am. They should write everything down. We ordered drinks, a few appetizers, my wife ordered her meal and I ordered their $250 Wagu steak special. When we ordered our second round of drinks my wife asked for her drink to be served in a short glass instead of a tall glass, he said no problem. 7-8 minutes later drink shows up in a tall glass. I said this was supposed to be in a short glass, he said you're right he messed up, i'll fix it. He took it back to the bar and i watched him since i had a clear view to the bar from my seat. He hands it to the bartender and the bartender takes the tall grass and pours it in a short glass and dumps the rest out, and hands it back to him. Then the bartender looks up at me and sees that i saw him and had that "oh sh%t" look on his face. The server drops off the drink and i told him i just saw your bartender pour the same drink in a short glass, was that a joke? He said you're right, he did do that and i'm sorry about that, I will get you another one! This ruined our experience because how classless does a place (which pretends to be classy) has to be to do such a thing over a drink that they screwed up, and give you back half the drink! Most people would correctly consider this theft, I see it as poor management and service. I also ordered a Double Espresso for desert which i never received, instead he dropped off the check. They were penny smart and dollar stupid because we won't be going back. Grossly overrated.

VINO has always been one of our favorites and we were so surprised/disappointed with the new cost cutting measures. The pizza is no longer the thick crust delicious one we crave. It was a flat cheap one. The portion sizes shrank, they no longer give the Parmesan when you sit but a lesser mixture of items. Sadly - we used to celebrate all bdays there, but can’t justify the prices for the lesser quality. The staff was still extremely friendly, and could tell they felt bad that we weren’t getting what we were used to there.

We sat at same table with same server, Toriana, as had the last time. She is fantastic, listens to what we wanted, weighed in with options - exceptional service from Toriana. We’re adding Carbone Vino to our regular rotation and I plan to come back for Thanksgiving. Food and service were both fantastic.

FAQs

Yes, Carbone VINO is often recommended for date night thanks to its classy, romantic atmosphere, elevated Italian-American menu and an extensive wine list. Guests frequently praise the beautiful, sophisticated space and recommend trying the handmade pasta or signature pizza. Note that service and pacing can be hit-or-miss on busy nights, so consider an earlier seating or a reservation and mention any special requests when you book to help ensure a smooth, memorable evening.

Portions are largely family-style and meant for sharing, many guests note hearty, generous servings (especially for things like salumi boards and some entrees). That said, a few guests felt certain pasta portions were smaller than expected for the price. If you’re dining as a couple, plan to share appetizers, a pasta or pizza and a main to get the full experience.

Carbone VINO Dallas is open daily from 5:00 PM to 11:00 PM. If you plan to visit on a holiday or for a special occasion, calling ahead is a good idea to confirm hours and availability.

Families do visit and guests report parents bringing teens and celebrating birthdays here, so it’s kid-friendly for older children. It’s not a kids-focused venue (no kids menu noted), and the restaurant’s atmosphere leans more toward date nights and adult dinners. For younger children, consider an earlier seating and call ahead about menu flexibility.

The restaurant lists daily hours (5:00 PM–11:00 PM), which suggests it operates evenings every day, but specific holiday hours aren’t listed. For holiday service or special events, call ahead to confirm hours and availability.

For a quieter, smoother experience, choose a weekday evening (Tuesday–Thursday) or an earlier 5:00 PM seating. If you want the busiest, more energetic scene, visit Friday or Saturday night, but be prepared for longer waits and a livelier atmosphere.

Busiest: Friday and Saturday evenings, holidays and special event nights (guests report long waits and slow pacing then). Quietest: early weekday evenings or an earlier 5:00 PM seating tend to be calmer. If you prefer a relaxed meal, weekdays or an early dinner are your best bet.

For a calmer experience, aim for a weekday evening or an earlier 5:00 PM seating, guests report weekends, holidays and special events can be quite busy and slow. If you prefer buzz and energy, Friday/Saturday nights and holiday dinners deliver more of that lively scene, but expect longer waits and slower pacing.

The ambiance is upscale yet relaxed, a casual-elegant, classically styled Italian-American space with sophisticated finishes, dim lighting and a romantic vibe. Many guests call it beautiful and ideal for date night, though others mention it can be loud, crowded and dark as the evening progresses. Expect a polished, lively setting with an emphasis on wine and sharing plates.

The dress code is business casual. Guests report a mix of smart-casual and slightly dressed-up attire, comfortable but tidy clothing is appropriate. Business casual should keep you well within the expected vibe.

Yes, it’s a good idea to call ahead with special requests (birthday arrangements, seating preferences, dietary needs). Many guests requested birthday touches and seating notes; experiences vary, so confirm details with the host or manager when you book to improve the chance they’re honored.
