Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina. Today, he is the Executive Chef and Owner of Choplin's Restaurant, a true institute, 14 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

    I will not be coming back EVER again. My family has been coming to Choplin’s for several years, and the two times we’ve been in the last year, have BOTH been horrible experiences. Reservation times seem to be merely a suggestion (especially if made on OpenTable), they’ve overpacked the place to the point it’s probably a code violation, and the management is incredibly rude and doesn’t like to be questioned. Last night, we waited in the rain just to check in, only to have people cut in line and get checked in before us (because the hostess disappeared), and to find out that the wait was still 30-40 minutes. On Mother’s Day last year, we made a reservation and they did not specify indoor and outdoor seating (because they don’t usually have outdoor as an option), and when we arrived, they wanted to seat us outside….and it was extremely hot that day. I explained how that wasn’t what I made a reservation for, and the hostess was incensed over me questioning her, and very rude. She said that if we wanted inside that we would have to wait over an hour because they were fully booked inside. We had no other choice, so we stayed. Our table and seating were plastic. PLASTIC. And, we were packed in there like sardines, because that front area was not meant to be for seating. I won’t go into the multitude of code violations that were happening out there that day…in the parking lot, but it was clear they didn’t care. Needless to say, I felt like I was at a family picnic with 40 (yes, that many) total strangers. No privacy or personal space at all. It was no where close to fine dining. As a long time customer, I am very disappointed at how they are now running this place. It seems like all they care about is getting as many people in as they can, at any cost. Forget customer service and ambience.

    We loved our waitstaff, Wilson. Although it was packed for Valentine’s Day, the set menu was a smart choice and streamlined service. The suggested wine list was excellent. The dinner and dessert items also were excellent. We will return to Choplin’s and consider it a place to take out of town family. I plan work events so this will also be a small venue for me to consider for the future.

    We had reservations for Valentine’s weekend and was our first time dining here. We were met at the door with a declaration of a “Special Menu” at $90/pp. There was no indication of this on the website, no phone call, and nothing on the website. We were extremely disappointed that this pricing did not include courses with wine or beverage. Very disappointed….was not an enjoyable evening. Seating was uncomfortable and ambience affected by this. I was looking forward to this dinner and ended up only eating a small salad and crab dip for $70.

    We enjoyed their pri fixe dinner for Valentines Day. The meal was a great value for the price. High quality ingredients and delicious food… I will definitely be revisiting this restaurant.

    We went for the first time on Valentine’s Day and they were super busy of course. We had a 9:30 reservation but had to wait outside in the cold for 20 min and then inside for another 10-15 min before we got sat at 10ish. I’d recommend grabbing the heater from the patio table area and moving it by the door when customers are waiting outside in winter. We were at a makeshift table and had to sit either side ways or with our legs tucked under the chair because of no leg room. My fiancé is 6 ft tall so that wasn’t ideal but I can understand why they decided to add more tables for the night. They ran out of the soup and only had two types dessert left (which neither of us eat) on the prefixed menu so our four course meal turned into a two course meal. Ingredients for the salad was fresh but the main course was about the only thing we ate. I ordered the filet and my fiancé got a ribeye, both cooked and seasoned well. I don’t believe they were prepared for the amount of customers they had. Overall, it wasn’t worth the money we paid. The hostess was super sweet and had a great attitude even though I’m sure it was a stressful evening. Our waiter was nice as well. I’m sure if we went on a normal night with regular menu items, we would be more impressed but I don’t see us coming back.

    The food was definitely good and worth it, however they lacked in a lot of areas especially for the price. For an almost 200$ dinner for 2 i would at the very least expect them to invest in a full time bartender instead of making inexperienced waiters/waitresses attempt cocktails. Over the internet it’s seems like a classy place to have a dinner but it ended up feeling like high schoolers performing a play compared to broadway. Yea they tried, but clearly didn’t have experience. I’d argue the only professional in there was the person actually cooking the food.

    They screwed us by putting tables 2 inches apart wall to wall so no privacy and no ambience. Horrible place. Terrible experience. Very poor front staff.

    We usually love choplins and will go back in the future but Valentine’s Day was a major disappointment. Usually an intimate setting, for Valentine’s Day tables were crammed next to eachother and couples were sitting about a foot next to us on both sides. You couldn’t help but overhear everyone’s conversations. The servers couldn’t even get between the tables to serve food and drinks and had to reach across to do so. They ran out of deserts and it was impossible to try and get a drink ordered because of how overcrowded and overworked the servers were. The salad was dry with almost no dressing and the only soup option was served on the colder side. For the $ we paid, we certainly hoped for a much better experience than what we received last night from a place we usually love to go to.

    First, let me say we love Chaplins. Dining there on Valentine’s Day was new for us, but we thought we knew what to expect after being told about the prefix menu before we arrived. Well, we didn’t expect was that the table arrangement in the Wine Room was far far too crowded. There was zero room for the servers to move through the space. One couple s Who was dat after us left before ordering due to the over crowding and another table of 2 asked to be moved when another table became available because they were sitting directly in way of an entrance to the room. Once management realized the issue they removed one table but frankly it was not near enough. They should have removed 3-2 tops and rearranged the space accordingly. The food on the prefix menu was good, but not what we are typically accustomed to from Choplin’s. We realize the need for a prefix menu on a holiday like Valentine’s Day, but still, it simply did not hold up to their own standards. The lobster bisque was delicious. The salad was mediocre and barely dressed. My filet mignon was overcooked. My wife did enjoy her sea bass We were disappointed overall but we were in it for the experience and tried to make the best of it. We will be back because we love Choplin’s! But next year we will think twice before dining in any establishment with the prefix menu.
