   My parents were visiting from Yellowknife, and were absolutely floored by the excellent service at Darling. They don’t often have the opportunity to try new wines, and it can be intimidating to go to a new wine bar (even though my dad’s a chef). Our server made thoughtful and curated recommendations, was very attentive, and ensured that no one felt out of place asking a question about the wines. The flavours in the fennel salad were exceptional - we had the best steak of our lives as well as a tourtiere that would have knocked my grandma’s socks off, and when eaten alongside the brassica salad our meal felt quintessentially Alberta. Thanks to the Darling team for always delivering showstopper experience of a meal and superb service, even with a full house for Flying Canoe Volant!

   Surprisingly quiet & comfortable considering how small the place is. Maybe b/c we got a corner table for 4 at the end of the restaurant. Great visit with long time friends with good service and food.

   A cool, fancy, little “hole in the wall” restaurant with great ambience, wonderful service, and punchy flavours. The food was great, very creative and very well-seasoned with bold and interesting flavour profiles. We sat at the bar and our server Jess was knowledgeable and friendly, helping us with some suggestions for dishes and attentive to our drinks and each of our “first bites” to ensure we were happy. One of the best carpaccios we have had in the city so far, the linguine is a must, sablefish was cooked perfectly, and the anchovy toast was an umami flavour bomb (don’t be scared of this one- GET IT)! We also tried the croquette, and fennel salad which were both also very punchy and creative. Would highly recommend Darling if you like bold, creative dishes with a contemporary Canadian framework.

   the maple braised pork belly for brunch might be the best thing i’ve ever tasted in my life. i can eat this for the rest of my life.

    First time @ Darling. I don’t think it’s gonna be the last. Concise menu and wine list. Food was excellently made. I’m glad I went and experienced it with a friend. It’s a smaller room, which is nice a good bar area. Clean washrooms. My server, Adam was quite friendly too and engaging.
