Jack Timmons grew up in Texas and has lived in Seattle for over three decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience.

After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at ‘BBQ Raves’, Jack opened his first restaurant in the South of Downtown (SoDo) area of Seattle – Jack’s BBQ in 2014.

At our newest location on the border of Bellevue and Redmond, we serve authentic Central Texas Barbecue with Brisket, Ribs, Sausage and Chicken. Great craft cocktails including our famous Smoked Orange Old Fashioned. Incredibly good desserts like Peach Cobbler and Pecan Pie. Super delicious Breakfast Tacos. And as always, good times!

I’ve eaten there twice. The plate dishes were not as good as the sandwiches. Great potato salad. The biggest disappointment was the cup of chili I was given. It was like soup, very little meat. I could not see any until I dipped my spoon in it to scoop it out. That is unlike any chili I’ve ever seen. Anyway I’ll be back for a sandwich and give the local business a chance again because the owner seems like a nice guy.

Food was only ok. Service was slow even though restaurant was far from crowded.

We love Jack’s. It’s true Texas barbque that always delivers. We tried the steaks and Cesar and they were delicious. We’ve also taken their smoking classes and they are well worth the time!

For the PNW area this is a pretty good BBQ joint. I am from North Carolina and had a Dallas person on our table and we both agreed the food was pretty good and the real thing. Service was a bit spotty. Our server was nice, but they were not appropriately staffed on a Wednesday. If you are looking for good BBQ at good prices, this is a good place to visit.

All of the food was excellent and the service was great! Our family ordered different items: catfish, ribs, sausage, brisket, BBW chicken sandwich and they were all great. Don't forget to order the fixins!

Best BBQ in NW! Ribs so yummy you don’t need sauce. Amazing! Weekend breakfast tacos were awesome!! Hats off to Jack! LR

Great food but expensive. Wish they had more sauce options other than regular and spicy.

Loved the meats and the sides. Fairly heavy smoke flavor. All the meat is served dry with sauce available on the table. A couple of folks in our party (amateur bbq eaters) felt the smoke flavor was too heavy, but I do a lot of bbq and I thought it was spot on. We had the family platter with a little bit of everything! Plenty of food for 4 adults and a kid; we went home with leftovers. Sides were great! Especially loved the Mac and Cheese and the cornbread. Would have been good to have had a few dishes specific for kids (basic burger, non-spicy mac n cheese, etc). I'll be back!
