Executive chef: Peter Merriman

From the OpenTable editors: The LA Times once called Peter Merriman “the aloha Alice Waters” because of the chef’s lasting reputation for championing local ingredients. At Merriman's, which first opened on the Big Island in 1988, that translates to updated Hawaiian classics like macadamia-crusted mahi mahi and taro falafel. The group blazed trails across four islands by 2018, and the latest Honolulu location stands out for its wild green-and-white floors and jungle prints.

Philosophy

All of Peter Merriman's restaurants share a common mission statement: Do the Right Thing! Every member of the staff is taught to respect the `aina (land) that feeds and the people who produce the food, to be proud in their work, and to take responsibility for making sure every customer has a memorable dining experience.

                                                                  As always, Merriman’s is a wonderful experience from start to finish. The restaurant crew runs a tight ship and service is excellent from when you check in, through when you leave. Food is excellent quality and reasonably priced. Good ambiance with live piano music. It was a little loud when we first got seated at 7:30 pm but mellowed out. It’s a go-to favorite spot that is always on our list.

Everything’s fresh have some interesting twists that are phenomenal - poblano mashed potatoes, house-made kimchi, string beans with macadamia nuts, etc. Seafood dishes are top notch, but don’t sleep on the crispy pork shank - it rocked our world.

                                                                  It was our first time here. Service was very good.. Our server was Elaine and she was pretty attentive. The prices was moderate to pricey. The food was worth it. It was very busy but they took care of our needs pretty quickly. It was a little warm where we were sitting. But other then that we enjoyed ourselves.
