   My husband and I had a lovely anniversary dinner. Staff was knowledgeable about the cuisine, ingredients and history. We also did the drink pairing and it was phenomenal! Would definitely recommend! Everyone was so kind and friendly. Definitely worth every penny.

   Incredible. The staff are absolutely lovely. Food is phenomenal. Tells a story and pays homage to the culture.

   Just experience it. The old world of Mexico is so lost to us as neighbors and the food is such a beautiful way to see through the times and regions of their cultures. The staff is fantastic and the drink pairings and cocktails are all worth the extra spending.

   Outstanding! Our meal at República was fantastic. Although I do not generally eat only vegan, my dining companions do. We all had the ten course vegan tasting menu. I’ve recently been fortunate enough to have dined at a number of Michelin starred restaurants but my favorite meal was at República. Each dish was thoughtfully designed and prepared to perfection. Unlike other vegetarian or vegan meals I’ve had, this one did not overly rely on the same few vegetables for numerous courses. Even Eleven Madison was surpassed in this regard. The service was excellent, with various staff coming by to knowledgeably explain each dish and how it relates to República’s “Mexico forward” cuisine. It was a great dining experience. I can’t wait to get back to Portland for another meal there.

   I took my friend to Republica to celebrate her birthday and the crew at Republica did not disappoint. The service was impeccable! The servers were so knowledgeable and we loved that each dish and wine pairing had a story. The food was delicious and with the wine pairing the flavors were incredible. The Chef and General Manager (Andres) treated us so well and put such nice, personal touches on the whole experience. I can't wait to go back again!

   Food as art, art as culture, a wonderful experience. Unpretentious and accessible, but with all the makings of Michelin star tasting menus. A must for anyone who enjoys food with a story!

    Incredibly creative and innovative take on Mexican cuisine. An immersive journey into the foods of Mexico, past and present. Great selection of wines, service was perfect and the whole evening was quite enjoyable, will return soon... G.
