Restaurant Olivia is a pasta-focused restaurant located in Denver’s Wash Park neighborhood. Olivia is the second project from chef Ty Leon, beverage guru Austin Carson, and hospitality maven Heather Morrison.

Each evening we open the doors to our restaurant as if it were our home, welcoming guests with warmth and graciousness. We believe you’ll feel our attention to hospitality the minute you step inside.

We draw inspiration from classic Italian dishes and the traditions that bring them to life, but we also feature flavors and recipes from around the world. Our food is made with care and intention. We source our ingredients from organic and local producers whenever possible. Our beverage program features expertly-crafted but playful cocktails, alongside an Italian-focused wine list.

We look forward to sharing with you our passion for outstanding food and service.

The family helped shape what we now know as the world-renowned Barolo and Barbaresco regions, revived nearly extinct grapes such as Arneis, and invested in new territories, spearheading the revival of Timorasso. We’ll celebrate these remarkable accomplishments while sampling six classic Piedmontese wines, including Barolo and Barbaresco, perfectly paired with Chef Ty’s five Piedmont-inspired courses. Urs, who oversees all world export markets and is a passionate advocate for everything Piedmont, will preside at our communal table, sharing his wisdom and anecdotes from this historic winery. The tasting includes the full Burzi lineup, including two vintages of their coveted Capelot Cru wines, along with Barolo, Langhe Nebbiolo, and traditionally important, Barbera d'Alba. These evenings combine learning with a relaxed dining experience featuring a light two-pasta dinner, chef-curated charcuterie, and the company of like-minded wine enthusiasts around our communal table.

Service was not good. Server took a while to come for the first time. I was still trying to decide on the wine . She could have explain their menu but nothing . She left then sone time passsed and i was trying to get her attention to order wine and she can take our order then comes and she asked to place the order with everything you are ordering for the night... and we did . She brought the food and left. And never saw her again . We asked manager for check and he told us a 20% service fee is included . Which is fine . BUT it explains the horrible service the service provided. Why would she work for it?? She knows she gets it regarless. Is a party of two people our bill about $400 because of the wine. The easiest money she made. I usually see this on bigger parties. We have been to many nice /expensive restsurants and they don't do that. I don't mind giving a 20% tip. Try at least to earn it!!

Once again, inspiring food, spot on service, Greg, our server was informative, witty, and had great suggestions. Everything is exceptional imho. Just wish the parking was better. Even better, wish they would open one on S. Pearl St.

Food was only ok for the price. The time between courses was way too long, almost 3 hours for 5 courses is ridiculous. Our server was great though.

NYE was our first time dining at Restaurant Olivia. We had an amazing time. The service was great (thanks, Phil & team), the sommelier Scott was super knowledgeable and accommodating, and brought out the wine bottles for each pairing so I could take pictures to save in my wine app, and the food was delicious. Additionally, despite being the early seating on new years eve, we were never rushed. We will definitely be going back.
