Chef/Owner Keiichi Maemura chose the name Shimuja in respect to Shimazu Nariakira, for his Philosophy, Intelligence, and being wise. His focus is to give people out of Japan an opportunity to eat Tonkotsu Ramen made with soy sauce, which is the taste of home in Kagoshima.
Kagoshima Special is a Ramen created by Chef/ Owner Kei-san himself. Extra chashu and a whole egg float at the base of this large bowl of ramen, and in the center there is a generous portion of mixed steamed vegetables. Topping the entire bowl off is a large pinch of our fried burdock root, a labor of love that adds a textural contrast and an earthy flavor to the soup. The burdock is piled in a way that is representative of the volcano on Kagoshima which is still active to this day.
Shimuja is known for its cozy atmosphere, selected by SunSentinel Travel & Life as one of the 18th best dishes in all of South Florida.

Awesome first experience. Had been meaning to dine here and finally got the opportunity. Started with Shishito Peppers (great!) The ramen was excellent which my wife and I shared as well as a crispy chicken curry. Desert was amazing as well (Macha Tiramisu & Japanese Crepe Cake).

When arriving to the restaurant, we were greeted and seated almost immediately. Unfortunately, the service wasn’t as great. One of us ordered a bubble tea drink and it did not arrive until we were paying for the bill. We had multiple staff coming up to the table so we didn’t have a set waiter/waitress, and in addition to that, not one of them came to check on us. They did not check on the boba drink we were missing, how the food was/if everything was okay, or if we needed anything. Luckily, our party knew how to use chopsticks which they provide on the table. If not, we probably would have gotten a fork along with our bill. In addition to that, the fastest they ever came to the table was to grab our card without a word and scan it on their machine with a thank you muttered before running off again. The service being poor was upsetting because we did enjoy the food. Only the food. We will not be dining here again.

Best ramen I’ve had in US. Even better than some of the popular shops in Japan that I’ve tried.

The service needs to improve a little, servers were not friendly and the attitude was “I’m doing you a favor type”… not all, but out of the maybe 4 we interacted with 3 had that attitude… now for the food, wow, one of the best ramens I’ve had… will definitely be going back, just hope the service improves

I can’t say enough about this place. From the moment you walk in Roxanna greets people with her beautiful smile. She tends to people right away. The service is excellent. Food is out of this world. The best pork buns ever!!!! I personally love the mazezoba ramen. It’s soupless ramen. So delicious. Everything on that menu, you can’t go wrong. I love this place.

I will definitely recommend this place, if you’re looking for good and authentic noodles. Both my husband and myself were very satisfied on both visits with the service and prices as well.

Shimuja was an amazing experience. The food was delicious and the service was good. The only thing was that even with a reservation, I still had to wait for a table.
