Slope Room is an Alpine Bistro focused on the connection between Rocky Mountain farmers and ranchers. Pasture-raised, sustainable proteins, and locally sourced produce are front and center at the sophisticated yet cozy restaurant and bar.     We booked the Slope Room with high expectations for our trip to Vail. As we walked in for our 6:45 reservation, we saw several groups of 10+ diners already seated. It was concerning. As we sat, we were greeted cordially and ordered gasses of wine which were promptly delivered. Unfortunately, the group we were seated next to, as groups often are, was very loud. We realize as a group of two, they would be hesitant to seat us at a four top away from the group, but they had them available and it would have improved our experience. We ordered the cornbread. It arrived warm-ish, and with a little less corn flavor than we like, but opinions differ on cornbread. This is when trouble struck. I ordered the venison, medium rare, and my wife ordered the scallops. After an extended wait for our food, my venison arrived medium/medium well. The server promptly recognized it and offered a re-cook. Initially we said yes, but while a priority in the kitchen, after some time we declined and decided the night was not the good time we had expected. They took our entrée course off the bill, but didn't offer anything else as an apology. We ended up paying $112 for a couple glasses of wine and some lukewarm cornbread. Certainly not the experience we hoped for.

    We enjoyed our dinner. The food was excellent. We ordered a bottle of wine that was sold out. We were disappointed and selected a similar bottle that was more expensive. The Sommelier gave us the price of the original bottle which we truly appreciated, and it was the right thing to do. There was a bit of a mixup with a delivery of one of our main courses and when it arrived, it was cold. The kitchen took it back and made us a new one without any complaint or hesitation. So we truly appreciated this good customer service and we will be back to this restaurant next year .

    This was our first visit to Slope Room- we loved the atmosphere, food, and service. The trout was absolutely divine! The chef is talented, and the professional wait staff is quite knowledgeable and efficient. We will add it our annual list when we return to Vail!

    Excellent Food! We order the Cornbread followed by the Beet & Burrata appetizer! The cornbread was the best I’ve ever had in my life! It tasted like a sweet and savory pancake, and was insanely fluffy. Pair that with the unique tasting Beet and Burrata Salad, it was a perfect match. For my main I ordered the Short Rib entree which was outstanding. For the sides we ordered Brussel Sprouts and Truffle Mac. The Drinks were just as good as the food! They were each very unique in taste and style. Ambiance was great! It is in a Boutique Hotel in Vail and it gives cozy-lux cabin vibes. The noise was as expected in any Vail Restaurant, which I thrive off of. They originally tried to seat us in a lonely area (no diners), so I asked them to reseat us in a livelier area because I don’t like being secluded. As an Extrovert I thrive on Good Vibes! The hostess was reluctant, but I insisted until she reseated us, thankfully they accommodated. When it comes to Vail, Ambiance is just as important to the Food in my opinion.
