Executive Chef Jon Simoneau has developed a menu that features fresh, sustainable raised Colorado beef for quality steak selections and a range of New American dishes that can be enjoyed. We also have a full cocktail bar and carefully curated an extensive selection of wines that is approachable and newcomers and connoisseurs alike.

We are located adjacent to Union Station on the corner of 15th & Wynkoop. Our focus is on consistently good food without the frills and fuss of haute cuisine but delivering on 5-star service.

Keanna was the BEST SERVER!! She was responsive and had good recommendations!! She set me up with an AMAZING wine flight for my food. HIGHLY recommend and I WILL RETURN!!!

Really loved our experience and food last night; we’ll be back. Bummed that the Korean Lollipops were sold out, but food and drinks were top notch as was the service. Definitely not a quiet room but there are other steakhouses in town that are far louder, and the energy was good even at 9 at night. Again, loved it.

They were out of 2/4 steak options. Servers failed to communicate and we found ourselves repeating what we had just said when ordering/getting a table.

The food was delicious and inventive. Our waitress was very attentive and spot on about what to expect with the menu choices. Only downside is the noise level of the music which just makes everyone talk louder so it is very hard to have a pleasant normal conversation across the table. Given the noise it outweighs the positives of the service and food.

Highly recommend! I traveled from the Philly area to visit my daughter and found the Velvet Cellar online. Everything was absolutely delicious, from the drinks and appetizers to the entrees. The crème brûlée was outstanding, and our server, Courtney, provided great recommendations and exceptional service. We left full and completely satisfied. Well done!

My wife and I spent our anniversary here and it met any and every standard. Food was great and the service was amazing. I highly recommend this establishment for any romantic evening away with your loved one.

NY strip was mediocre at best even with the peppercorn sauce. Fries way over salted. Brussel sprouts were the worst she has had - not fresh. She did like the shrimp and grits.

Service was very, very, very slow for both drinks and food which kind of soured the night. Menu had Many GFO options which was appreciated- Meatball app was good, but Burrata app was not great- way too chilled. Steak was average, salmon was good.
