Originally from Mexico City, Chef Fernando Olea, formerly Chef of Epazote, has been enthralling diners in Santa Fe since 1991. Chef Olea creates sophisticated flavors using Old Mexico’s indigenous and culinary traditions alongside ingredients from around the world. His menu is deliberately small, featuring fresh and locally sourced produce and meats when possible.

Nothing evokes the mystery of Mexican cuisine more than mole, a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Chef Olea is delighted to share his moles that include his "New Mexican Mole" that he created to commemorate Santa Fe’s 400 year anniversary in 2009. The large mural in the main dining room, was painted and presented to Chef Olea by Federico Leon De La Vega, a well- known artist from Mexico City.

    Wow. What a gorgeous environment to enjoy a meal! But sadly the food was a disappointment and I ended up embarrassed I asked my friends to such an expensive restaurant. I’ve had an amazing meal here before but tonight the food was just OK. The chef’s special soup was very good but the shrimp enchilada was tasteless and used poor quality tiny shrimp. The other items were fine but didn’t shine. Service was odd. The servers tried to present and remove all dishes simultaneously but it just felt forced and awkward. Our drinks menu was whisked away before we had made a final decision on margaritas or wine with dinner, so we had to ask to see it again. I hope it was just an off night for Sazon.

    Service from Alicia was impeccable. Very responsive and knowledgeable. Food was amazing the soap de amor. We especially loved talking to the chef. Loved that he spent years in MN, my home town.

    Totally worth it!! Such an incredible dining experience. From the mole tasting to start to the symphony dessert at the end. Our waitress was amazing and went above and beyond. Truly a special experience and would highly recommend

    From the moment you walk in the door you are greeted with warmth. The service is impeccable and friendly. All the dishes from soup to dessert were richly layered with flavors that played a symphony on the palate. I had the duck breast with a sweet mole that Chef Olea recommends and it was lovely. Don’t miss savoring this restaurant if you’re in Santa Fe.

    We could eat there ever night! Felt completely taken care of by the top notch staff - real teamwork in action! Chef Olea mixes imaginative dishes as beautiful as they are tasty…starting with a sampling of 5 different moles & mini tortillas from which we paired with our main course. Started with poulpo beautifully plated & fois gras perfectly seared, then on to a sensual sopa de amor & a hamachi torte we barely had room for our rack of lamb & duck breast special. Dessert was an ice cream with jalapeños in it with a sweet beet glaze. Decafe espresso martinis topped off one of our best lifetimes dining experiences!

    Dinner at Sazon was delightful in every possible way! The service, the decor, the FOOD!!! Chef’s signature soup was a revelation! You will spend money here but the return on your investment will be an evening to remember and worth every penny!
